dc.description.abstract | Die Suche nach einer Technologie zur Entalkoholisierung von Wein ist nach wie vor ein aktuelles Thema für die Weinindustrie, obwohl das erste Patent für die Entalkoholisierung von Wein schon vor 100 Jahren eingereicht wurde. Seit dem wurden verschiedene Ansätze zur Herstellung von entalkoholisierten Weinen untersucht, die sich in den verschiedenen Bereichen der Trenntechnik, wie z.B. Destillation, Extraktion oder Zentrifugation, bewegen und thermische sowie athermische Prozesse umfassen. Zu der Gruppe der Verfahren ohne Hitzeeinwirkung gehören in erster Linie Membranverfahren, die seit den siebziger Jahren des 20. Jahrhunderts zur Abtrennung von Ethanol aus Getränken eingesetzt werden und deren Triebkraft entweder ein Druck- (z.B. Reversosmose) oder ein Konzentrationsgradient (z.B. Dialyse) ist. In dieser Arbeit wurde als neues Verfahren der Membrantrenntechnik die Osmotische Destillation als mögliche Alternative zur Entalkoholisierung von Weinen untersucht. Es sollten zum einen verfahrenstechnische und zum anderen sensorische Kriterien zur Beurteilung der Eignung der Osmotischen Destillation zur Entalkoholisierung von Wein analysiert werden. Hierzu wurde zuerst der Einfluss wichtiger Prozessparameter auf die Abtrennung des Ethanols und wichtiger Aromastoffe untersucht und anschließend die gewonnenen Weine unterschiedlicher Ethanolgehalte (6, 3 und 0,5 Vol.-%) chromatographisch analysiert und sensorisch bewertet. So war es möglich, eine Bewertung über den gesamten Herstellungsverlauf abzugeben. Mit Hilfe statistischer Auswertungen wurden die sensorischen Attribute bestimmt, die die Akzeptanz des Konsumenten am stärksten beeinflussten. Die Umlaufgeschwindigkeit der Stripplösung und die Temperatur wurden als signifikante Einflussgrößen für die Selektivität des Prozesses identifiziert, wobei die maximal gewählten Faktorstufen von 300 mL . min-1 für die Strippgeschwindigkeit und 50 °C für die Prozesstemperatur als optimal für die Selektivität festgestellt wurden. Da sich jedoch die Parameter unterschiedlich auf die wichtigen, aromatisch wirksamen Ester und Terpenalkohole auswirkten, waren zur abschließenden Beurteilung sensorische Untersuchungen notwendig. In diesen hatte der Verlust der Aromakomponenten während des Prozesses einen signifikanten Einfluss auf die Aromaprofile aller behandelten Weine und führte mit abnehmender Ethanolkonzentration zu immer geringerer Akzeptanz der Produkte. Die zur Auswertung herangezogene PLS Regression ergab darüber hinaus, dass der Ethanolentzug einen gewichtigeren Einfluss auf die Ablehnung des Endproduktes hatte als der Verlust der Aromakomponenten. Daher wurden allein die 6prozentigen Weinproben durch die Prüfer als „beliebt“ eingestuft. Damit zeigten die Untersuchungen, dass sich die Osmotische Destillation als Verfahren zur Herstellung teilentalkoholisierter Weine bis ca. 6 Vol.-% eignete, jedoch in dieser Studie keine Alternative zur Herstellung von entalkoholisierten Weinen darstellt. | |
dc.description.abstract | Evaluation of osmotic distillation for the dealcoholisation of wine The quest for a new technology for dealcoholisation of wine is still an ongoing process in the wine industry, though the first patent on the removal of ethanol from wine was handed in 100 years ago. Since then different approaches on the production of dealcoholised wines have been tested, comprising different processes in the field of separation technology, i.e., distillation, extraction or centrifugation. These processes can be either thermal or athermal. Membrane processes mainly belong to the group of processes with no heat impact on the product. Since the 1970s they have been used for removing ethanol from beverages and are either pressure-driven (i.e. reverse osmosis) or concentration-driven (i.e. dialysis) processes. In the frame of this thesis the osmotic distillation, which is driven by a partial pressure gradient over the membrane, was chosen as a new membrane process. It was investigated as a possible alternative for removing ethanol from wines. Therefore different criteria were explored, either from the process engineering point of view or from sensory perspectives, in order to assess the ability of the osmotic distillation to remove alcohol from wine. In a first step the influence of important process parameters on the removal of ethanol and of valuable aroma components were tested. Subsequently, the produced wines of different ethanol concentrations (6, 3, and 0.5 % vol.) were analyzed chromatographically and evaluated using sensory tests. Thus, it was possible to assess the quality of the products during the whole process. By means of statistical evaluations the sensory attributes, which account most for the consumer’s acceptance were identified. The velocity of the strip solution and the operation temperature have been found to be of significant influence on the selectivity of the process, whereas the maximum values of the factors chosen (300 ml . min-1 for the strip solution and 50 °C for the process temperature) could be identified as the optimum for the selectivity. Since the parameters had different influence on the aroma active compounds, such as esters and terpenes, sensory evaluation was necessary for a final assessment of the wines. Thereby the loss of aroma compounds during the process had a significant influence on the aroma profiles of all wines treated. With less ethanol concentration less acceptance of the products was achieved. The evaluation by means of PLS regression lead to the result that the removal of ethanol itself had a bigger influence on the disliking of the product than the loss of aroma components. Therefore only the samples with 6 % vol. have been judged as “accepted” by the panelists. These results showed that the osmotic distillation can be used as a process to produce partially dealcoholised wines up to an ethanol concentration of 6 % vol. but is probably no better alternative to existing dealcoholisation methods. | |
